Oysters Rock


This is one of my favorite make at home items,  Oysters ala Rockefeller style. Fine dice fresh fennel and white onion. Then chop fresh spinach.


















Then shuck the fresh oysters. Cup side down to retain the liquor. Be careful here. Check for shell chips and then drain each oyster and save the liquor.


Mix the spinach, onion and fennel. Saute in garlic butter adding a generous dash of secret sauce: Pernod if you have it which you should.


Make the Hollindaise sauce. Unless you are quite accomplished in scratch sauce Knorr mix is very good. I add some cayenne pepper and lemon juice to their mix.










Lay oysters on a crinkled foil pie tin to keep them upright. Top each oyster with the spinach mixture and douse with the saved liquor. Pop in the oven 350 degrees for about 20 minutes.

Then top each with Hollindaise sauce and bacon bits and set on serving plate.






Now all that's left is to open the wine and enjoy.
